摘　　要：探讨了HACCP(Hazard Analysis and Critical Control Point,危害分析与关键控制点)在马口铁罐装番茄汁生产中的应用。为保证马口铁罐装番茄汁的产品安全,对其生产过程中的各个环节可能存在的潜在危害进行分析,根据HACCP原理确定关键控制点和关键限值,并制定相应的预防措施和监控方法,将马口铁罐装番茄汁生产过程中的危害降到到最低限度,以保证产品的安全。The application of HACCP in the production of tinplate-canned tomato juice was discussed. In order to guarantee the safety of tinplate-canned tomato juice,the potential hazards during processing were analyzed,the critical control points（CCP） were identified with the critical limits established in accordance with the principle of HACCP,and corresponding prevention measures and monitoring methods determined to minimize the hazards during the processing of tinplate-canned tomato juice.
