摘 要:通过单因素实验和正交试验,确定了以85%乙醇为浸提溶剂的红薯叶绿素提取工艺条件:乙醇体积浓度85%、料液比1∶70、浸提温度60℃、时间5.0 h为最优条件,提取率达0.2103 mg/g。并对叶绿素的光、热稳定性及耐酸碱性方面进行研究。结果表明:叶绿素具有良好的耐热性;光照会影响它的稳定性;在弱碱性中,它的稳定性良好。Using single factor experiment and orthogonal test,the optimal conditions for the extraction by using 85% ethanol as solvent were obtained as follows: 1∶70 of liquid to solid ratio,60 ℃ of extraction temperature and 5.0 h of extraction time.The extraction ratio of chlorophyll could be achieved 0.2103 mg/ g.Moreover,the photo-stability and thermo-stability of the chlorophyll and its tolerance for acidifi-cation were further studied.The result showed that chlorophyll had good tolerance for thermo-stability.The stability of the chlorophyll could be influenced in lighting.Chlorophyll was relatively stable under alkalescent circumstances.
