摘 要:采用不同有机溶剂浸提苋菜,测定提取物总酚类含量,通过DPPH自由基消除能力和亚油酸过氧化抑制作用评价提取物抗氧化活性。结果表明:皱果苋甲醇提取物总酚类含量最多(26.55 mg.g-1),而血苋水提取物最少(2.70mg.g-1);当浓度为500μg.mL-1时皱果苋甲醇提取物对DPPH自由基的消除能力最强(62.1%),而血苋水提取物的消除能力最弱(9.4%);当浓度为100μg.mL-1时皱果苋甲醇提取物对亚油酸过氧化抑制率最高(63.5%),与槲皮素(63.7%)相当,说明皱果苋甲醇提取物具有很高的抗氧化活性。Total polyphenol contents of different parts of the Arnaranthus were determined. The antioxidants were ex- tracted from Amaranthus with different extraction solvents such as methanol, ethanol, 70% methanol, 70 % ethanol and water etc. The antioxidant activities of extracts from Arnaranthus uiridis L. and Iresine herbstii Hook. f. were evaluated by scavenging capability on DPPH free radicals and inhibitory effect of lipid peroxidation. The experiment results indica- ted that antioxidant activities of the A. viridis extracts were stronger than I. herbstii extracts. The total polyphenol con- tents of methanol extract of A. viridis were significantly higher than others. Moreover, the scavenging capabilities on DP- PH free radicals of methanol extracts from A. viridis were significantly higher than others. The inhibition effects of lino- leic acid peroxidation of methanol extracts from A. viridis with quercetin were similar. These results demonstrated that the methanol extract of A. viridis is a potent antioxidant.
