摘  要:该试验选取60只简阳大耳羊2月龄断奶公羔集中阉割后,分为放牧、放牧+补饲、舍饲3组进行饲养,分别在6月龄和周岁时进行屠宰产肉性能测定.结果显示在舍饲条件下,简阳大耳羊6月龄、周岁阉羊平均屠宰率为48.53%,50.03%,比放牧条件下高3.33个百分点和2.67个百分点,平均净肉率分别为37.06%,39.46%,比放牧条件下高2.16个百分点和1.67个百分点,表明简阳大耳羊是一个优良的肉用山羊品种,对简阳大耳羊进行舍饲,增加营养供给可提高产肉量.同时,对舍饲条件下简阳大耳羊6月龄羔羊肉进行了肉品质分析,结果表明简阳大耳羊羔羊肉肉质优良,胆固醇质量分数低,且富含人体所必须的各种氨基酸和脂肪酸,粗蛋白质量分数为21.08%,粗脂肪质量分数为1.22%,胆固醇质量分数为476.2μg/g;羊肉中必需的氨基酸质量分数比较丰富,占干物质的43.66%;羊肉脂肪酸中油酸质量分数为38.53%、亚油酸质量分数为4.42%、棕榈酸质量分数为18.71%.Sixty 2-month-old wethers of Jianyang Daer goat were randomly divided into 3 groups(a grazing group,a supplementary feeding group and a barn feeding group),and slaughtered when they were 6 months and a year of age,and their meat performance was tested.The results showed that the Jianyang Daer goat was a superordinary meat goat breed.Under the housing condition,the dressing percentage of 6-month-old and one-year-old Jianyang Daer goat averaged 48.53% and 50.03%,being 3.33% and 2.67% higher than that under the grazing condition,respectively;and the catability percentage averaged 37.06% and 39.46%,being 2.16% and 1.67% higher than that under the grazing condition,respectively.In addition,the meat quality of the 6-month-old lambs raised under the housing condition was tested.The results showed that the lamb meat quality of Jianyang Daer goat was very good.It was relatively low in cholesterol and rich in essential amino acids and fatty acids.The contents of crude protein,crude fat and cholesterol were 21.08%,1.22% and 476.2 μg/g,respectively.The essential amino acid content was 43.66% in the dry matter of meat.The content of oleic acid,linoleic acid and palmitic acid of lamb meat was 38.53%,4.42% and 18.71% of the intramuscular fatty acid,respectively.
