摘  要:了解新疆农村维吾尔族初中学生的膳食营养状况,发现其膳食中存在的问题,提出具有针对性的改善营养状况的对策和建议。选取喀什地区伽师县夏普吐勒乡中学作为实验组,英买里乡中学作为对照组,分别抽取3个年级约300名学生作为研究对象。定期对学生进行营养知识宣教,采用24h膳食回顾法,结合食物称重法和饮食习惯调查表进行连续跟踪调查,对比宣教前后的调查结果,根据《中国居民膳食指南》和《中国居民膳食营养素参考摄入量(DRIs)》作出评价。结论显示:宣教前后,新疆农村维吾尔族初中学生的膳食营养状况无显著变化。摄入的总能量低于DRIs;三餐热能分配较为合理;蛋白质供能比基本正常,脂肪供能比严重偏低,碳水化合物供能比偏高;各种营养素的摄入量不均衡,其中维生素A、维生素B2和钙严重缺乏,钠的实际摄入量严重超标。Objective.. To understand the food nutritional status of Uygur middle school students in rural areas of Xinjiang,to determine the dietary problems, and to propose targeted measures and suggestions to improve the nutritional status. Subjects.. To select about 300 students of three grades respectively from Xiaputule Middle School of Jiashi County in Kashgar region as the experimental group and another 300 from Yingmaili Middle School as the comparison group. Methods: To pass on nutritional knowledge to students regularly, to survey continuously with 24-hour dietary recall method and food weighing method as well as food habits questionnaire, to compare the results before and after nutritional education, and to evaluate in accordance with Dietary Guidelines and Chinese Dietary Reference Intakes (DRIs). Conclu- sion.. There is no obvious change of the nutrition status of Uygur middle school students in rural areas of Xinjiang before and after nutritional education. The total energy intake is lower than DRIs. And the ener- gy distribution of three meals is reasonable. The energy provided by protein is normal, but that by fat is seriously low, while that by carbohydrates is comparatively high. The intake of various nutrients is unbalanced, of which there is a serious lack of vitamin A, vitamin B2 and calcium, while the intake of natrium is far above the standard.
