摘 要:[目的]建立ICP-MS测定膨化食品中铝含量的方法,对成都地区销售的膨化食品中的铝污染水平进行测定分析.[方法]在成都地区的商场超市、餐饮店、农贸市场和路边摊点采集各种膨化食品57份,样品经微波湿法消解后,用电感耦合等离子体质谱进行测定其中铝的含量.[结果]试验测得,从农贸市场和路边摊采集的油炸膨化食品铝含量超标严重,超标率达100%,最高含量达872.00 mg/kg.测定方法的最低检出浓度为0.670 mg/kg,相关系数为r=0.999 9,回收率为98.53% ~ 102.01%,测定结果的RSD为6.5%.表明该测定方法的准确度高、方法简便、线性范围广.[结论]建议新的国家食品安全标准中应更加严格控制膨化食品中含铝食品添加剂的使用,加强对农贸市场和路边摊食品安全的监督管理.[Objective] To establish ICP-MS method for the determination of aluminum in puffed food and make a survey and assessment of aluminum exposure from puffed food in Chengdu.[Method] A total of 57 varied puffed food samples were collected from supermarkets,restaurants,farmers' market and roadside booth in Chengdu City,the samples were wet digested,analyzed by ICP-MS.[Result] The results showed that the aluminum of deep-fried puffed products from farmers' market and roadside booth exceed the standard seriously,the highest was 872.00 mg/kg.The lowest detectable concentration of 0.670 mg/kg,correlation coefficient of r =0.999 9 ; the recovery rate from 98.53%-102.01%,relative standard deviation was 6.5%,respectively.[Conclusion] It is proposed the food additives with aluminum should be strictly controlled in production of puffed food,and it is necessary to further strengthen food safety control of farmers' market and roadside booth.
