摘　　要：目的研究酱油中乙醇的快速检测方法。方法取10 ml酱油样品,经水浴加热吹气,将乙醇吹入碱性高锰酸钾溶液中,使澄清的紫色高锰酸钾吸收液褪色。结果采用目视比色法,半定量检测酱油中乙醇含量。结论此法集样品处理和检测为一体,装置易得,操作简单,实施方便,所需样品量少,灵敏度高,可以快速、简便、准确地半定量检测酱油中乙醇含量,可用于酱油酿造厂生产中质量控制及产品检验,同时也可作为鉴别酿造酱油与参伪酱油的一种快速检验方法。Objective To study a new method for rapid detection of ethanol content in soy sauce. Methods By heating in water bath, the ethanol in 10 ml soy sauce sample was blew into potassium permanganate solution for color fading. Results Semi - quantitative detection of ethanol content in soy sauce was carried out by visual colorimetric method. Conclusion This method is fast, accurate, sensitive and easy to operate due to the simple instrument and less sample consumption in semi - quantitative detection of ethanol content in soy sauce. This analysis method can be used in the production quality control and product inspection of soy sauce, as well as a better quicl - test method for identification of fermented soy sauce and the fake.
