摘 要:目的了解江苏省在售水产品甲基汞污染现状,为居民饮食安全提供指导。方法依据卫生部食品污染物监测计划,2012年采集样品181份,采用液相色谱一原子荧光联用方法进行检测。结果江苏省在售水产品甲基汞的含量范围〈0.203mg/kg,均未超过评价标准,合格率100%;各省辖市均值含量范围为0.008~0.054mg/kg,徐州市样品含量较高。常见水产品中银鳕鱼和带鱼的甲基汞含量明显高于其他水产品,分别为0.050~0.203mg/kg、0.015~0.134mg/kg,均值分别为0.104、0.052mg/kg。结论甲基汞污染普遍存在,尚在允许范围之内,不同种类的水产品污染程度不同。建议扩大检测水产品种类的范围,建立更加完备的水产品中甲基汞含量的检测项目。Objective To investigate the methylmercury contamination status in aquatic products of Jiangsu Province and to pro- vide proper resident food safety guidance. Methods 181 samples were collected according to food contamination surveillance program. HPLC-AFS was used for methylmercury analysis. Results Methylmercury concentration in market-sold aquatic products in Jiangsu Province ranged (d0. 004 - 0. 203 ) mg/kg, all meet the evaluation criteria, qualification rate was 100% . Average concentration of samples from all cities ranged from 0. 008 N 0. 054mg/kg, Samples from Xuzhou had the highest methylmercury concentration. A- mong common aquatic products, methylmercury concentration in anoplopoma firrtbria and trichiurus haumela was significantly higher than others. The concentrations were 0. 050% 0. 203 mg/kg and 0. 015--0. 134 mg/kg; while average values were 0. 104 mg/kg and 0. 052 mg/kg respectively. Conclusion Methylmercrury contamination is common in aquatic products, which is within permissible range and varies in different samples. In the future, more categories of aquatic products should be detected. Comprehensive methytmer-cury dectection project for auqatic products should be established.
