摘  要:目的对本地某高校一起商售食品污染肠炎沙门菌引起的食物中毒进行病原检测和溯源分析。方法事件调查中采集的标本以BAX system Q7进行快速筛查后按照GB4789等标准方法进行致病菌检测和鉴定;沙门菌分离株以脉冲场凝胶电泳(Pulsed-Field Gel Electrophoresis,PFGE)分型后进行同源性分析。结果事件调查中采集患者、食品制作人员和相关食品标本19份,首批患者标本在快速筛查中提示为沙门菌阳性;10份患者标本中检出5株肠炎沙门菌和6株O4群沙门菌(彻斯特沙门菌和圣保罗沙门菌),三明治和面包皮标本检出2株肠炎沙门菌;PFGE分型显示,7株肠炎沙门菌的电泳带型完全相同,而6株O4群沙门菌的相似度也为100%。结论这是一起由不同血清型沙门菌混合感染引起的食物中毒,与污染的三明治密切相关;脉冲场凝胶电泳技术适用于突发公共卫生事件病原的准确溯源。OBJECTIVE The study was conducted to identify and source-track the pathogen responsible for a food poisoning incident caused by Salrnone/ht-contaminated retail food sold in a college in Xiamen. METHODS Specimens collected for the investigation of the incident were rapid-screened for Salmonella by using BAX system Q7, and common foodborne pathogens were detected and identified according to the national standards, such as GB4789. Pulse-field gel electrophoresis (PFGE) was used to genotype the isolated Salmonella strains, and homology of the strains were analyzed. RESULTS A total of 19 samples, including specimens from the patients and kitchen staffs and the relevant food samples, were collected. Rapid- screening analysis suggested that the patients' specimens were Salmonella-positive ; 5 strains of S. enteritidis and 6 stains of 04 Salmonella (including S. chester and S. saitpaul) were isolated from 10 specimens of the patients. Meanwhile, 2 stains of S. enteritidis were isolated from sandwich and crust samples. PFGE genotyping indicted that 7 strains of S.enteritidis showed completely identical banding patterns and homology between 6 04 Salmonella strains were also 100%. CONCLUSION The food poisoning incident was a muhi-serotype Salmonellas outbreak and the cause was strongly related to Salmonella-contamined sandwiches. In addition, PFGE technique was demonstrated to be a useful tool for accurate source-tracking of pathogens responsible for public health emergencies.
