摘  要:采用偏最小二乘法(PLS)建立了山西老陈醋中掺杂食用冰醋酸的同步荧光定量检测模型。配制不同体积比的食用冰醋酸和4种老陈醋混合样品共124个,其中每种醋样21个校正集,10个预测集。在激发波长为250 nm^550 nm,波长间隔为70 nm处收集同步荧光信号。采用交互验证方法进行建模,并使用所建模型对未知样品进行预测。研究结果表明,相对偏差在±5%之间,预测结果准确可靠,预测最低掺假量可达10%。因此,利用同步荧光技术结合偏最小二乘法检测老陈醋中食用冰醋酸的掺杂量是可行的。By partial least squares (PLS) and synchronous fluorescent, quantitative detection model was established for edible acetic acid in adulterated Shanxi mature vinegar. 124 kinds of mixed samples of edible acetic acid and four kinds of mature vinegar were compounded, in which each of vinegar has 21 calibration sets and 10 validation sets. Syn- chronous fluorescence signal was collected in the 250 nm ~ 550 nm of excitation wavelength and 70 am of wavelength interval. Model was created by using cross-validation method. The results show that predicting the unknown samples by the built model indicate that the relative deviation was5%, the predicted results were accurate and reliable, the forecast of minimum adulterant amounts was up to 10%. Therefore, detecting edible acetic acid in adulterated Shanxi mature vinegar by synchronous fluorescence technology combined with partial least squares is feasible.
