摘 要:"三聚氰胺"以及双汇"瘦肉精"事件暴露出我国食品安全问题已经不仅仅是由中小企业或三无产品造成的,品牌企业也开始出现食品安全问题.在产品质量影响需求的假设下,研究以品牌食品制造企业为核心节点,具有众多小型供应商的品牌食品供应链的食品安全问题.研究表明:品牌食品制造企业作为品牌拥有者和受益者,获得品牌效益,且随时间和贴现率的增加而大幅增加,其不会选择制造和出售低质量产品;供应链的产品质量取决于全体供应商,而核心企业与众多小型供应商之间没有长期契约,供应商无法直接从产品质量提升中获益,且产品质量不仅仅取决于一家供应商,因此每个独立决策的小型供应商会落入"囚徒困境",从而提供低质量产品给核心节点;制造企业进入上游,实行一体化可以大幅度提升产品质量,确保食品安全,并提高整个供应链的利润;但是这在目前并不现实,采取品牌收益共享策略可以使得供应商提供更高质量产品,并提升供应链及各节点的利润."Melamine" and clenbuterol-tainted pork events of Shuanghui Group re- vealed that in China, the food safety problems not only exist in small firms, the brand food manufacturers also have that problem. Suppose that the product's qual-ity would affect the market demand. To study the food safety issues in the branded food supply chain that consisted of branded food manufacturers as the core nodes and with numerous small suppliers. Studies have shown that: As the owner and beneficiary to the brand, the brand food manufacturer will get the brand benefit, and significantly increased over time and with the increase of the discount rate, it will not to choose manufacturing and selling low quality products. The food safety depends on all suppliers in the supply chain, and there have no long-term contract between manufacturer and suppliers; Suppliers do not get benefit directly from the quality increase, and the quality not only depends on one supplier. So, the small sup- pliers will fall into prison dilemma, i.e., to sell the worst of the quality raw materials to the brand manufacturer. The manufacturer to enter the upstream, i.e., vertical integration can increase the product quality dramatically, to ensure the food safety and improve the benefit of whole supply chain. But it's very difficult to take vertical integration in current situation. The revenue share strategy can make the suppliers to provide higher quality products, and to enhance the benefit of the supply chain and all nodes.
