摘 要:以5个直筒型大白菜品种为材料,对其叶片和叶柄中的主要营养成分进行测定,并利用电感耦合等离子体发射光谱法(ICP-AES)测定大白菜中矿质元素的含量。结果表明:不同品种的直筒型大白菜蛋白质、Vc、可溶性糖含量丰富,且品种间差异显著。叶片中的蛋白质、Vc、可溶性糖含量均高于叶柄。5个品种的莲座叶叶片中的蛋白质、Vc含量最高,叶球内叶最低;叶球内叶叶柄蛋白质、Vc、可溶性糖含量最高,莲座叶含量最低。新乡903的Vc含量最高,天津青麻叶的蛋白质含量和可溶性糖含量最高。叶球中矿质元素以Ca、P含量最高,同一品种叶球外叶的Ca、P、Fe、Mn含量比叶球内叶高。Taking five straight cylinder Chinese cabbage varieties as materials, major nutrients and mineral elements of blade and petiole were measured. The results showed that different varieties of straight cylinder Chinese cabbage all contained rich protein, Vc and soluble sugar, and there were significant difference among them. The content of protein, Ve and soluble sugar in blade were higher than that in petiole. The content of protein and Ve in blade of rosette leaf were the highest, in blade of within leaf were the lowest. The content of protein, Vc and soluble sugar in petiole of within leaf were the highest, in petiole of rosette leaf were the lowest. The content of Vc in Xinxiang 903 was the highest. The content of protein and soluble sugar in Tianjinqingmaye were the highest. Ca and P content in five varieties were the highest, Ca, P, Fe and Mn in outside leaf were higher than that in inside leaf of the same variety.
