摘  要:采用气相色谱法对63个市售散装植物油样本进行全脂肪酸组成分析,结果发现除花生油和玉米油全部合格外,其余植物油质量水平普遍较低,大豆油合格率为55.6%,芝麻油合格率为52.6%,棉籽油合格率为16.7%,葵花籽油合格率为33.3%。分析原因发现,大豆油产品的不合格主要是油脂氧化造成的,芝麻油、葵花籽油的不合格主要由掺假造成,棉籽油的不合格可能是由于精炼工艺不达标造成的。In this paper, gas chromatography has been used to analyze 63 commercially available samples of bulk vegetable oil for fatty acid composition. The resuhs show that, in addition to peanut oil and corn oil are all qualified, and the remaining vegetable oils generally fail to meet the standards. The pass rate of soybean oil is 55.6%, sesame oil is 52.6%, cottonseed is 16.7% and sunflower oil is 33.3 %. The cause is that the failure of soybean oil products is mainly caused by lipid oxidation; adulteration causes the sesame oil and sunflower oil failure; cottonseed oil failure may be due to non-compliance refining process.
