摘  要:目的了解新疆葡萄树伤流液蛋白含量及其抗氧化能力。方法采用考马斯亮蓝法测定新疆葡萄树伤流液的蛋白含量;以抗坏血酸为阳性对照,应用ABTS法、羟自由基试剂盒法、DPPH法和亚硝酸盐法,研究其对自由基的清除能力。结果不同产地、品种的葡萄树伤流液蛋白含量不同,其中和田木纳格最高,为22.4±0.07μg/mL;不同产地、品种的葡萄树伤流液清除自由基的能力不同,但对·OH的清除能力明显高于对DPPH·和NO-2·的清除能力。结论新疆葡萄树伤流液因产地和品种的不同,其蛋白含量及清除自由基能力也不同。Objective To study the determination o{ protein in bleeding sap from Xinjiang grapevine and its antioxidant activities. Methods The protein level of bleeding sap from Xinjiang grapevine was measured by Coomassie brilliant blue method; its free radical scavenging abilities were investigated by ABTS meth- od, hydroxyl radical kit method, DPPH method and nitrite method with aseorbic acid as a positive control. Results Because of different origins and varieties, there was significant difference in protein content of bleeding sap from grapevine, and Hotan Munage's was the highest, which was 22.4-0.07 μg/mL; its an- tioxidant activities also differed, and scavenging capacity to · OH was significantly higher than to DPPH · and NO2^- . Conclusion Xinjiang grapevine bleeding sap possesses different protein level and antioxidant activities, due to its origins and varieties.
