摘 要:目的研究空气、温度、沙枣树胶对葡萄树伤流液抗氧化活性的影响,探究稳定葡萄树伤流液抗氧化活性方法。方法利用羟自由基检测方法和超氧自由基检测方法,体外检测葡萄树伤流液受空气、温度和沙枣树胶作用后抗氧化活性的变化。结果葡萄树伤流液在空气中,随时间其清除羟自由基(·OH)的能力减弱。通过加热处理后清除·OH能力的降低速率减慢,但不能彻底阻止其降低过程。沙枣树胶能增强葡萄树伤流液清除·OH和O-2·的能力及其稳定性。结论空气破坏葡萄树伤流液抗氧化性能,加热处理只能减慢空气的作用,但沙枣树胶具有保护葡萄树伤流液抗氧化活性并使其稳定化的功能。Objective To study the influence of air, temperature and Elaeagnus gum on the antioxidant ac- tivity of grape bleeding sap, and to explore the stability of grape bleeding sap. Methods The antioxidant activity of grape bleeding sap was affected by air, temperature. The Elaeagnus was detected by hydroxyl radical and super-oxide radical methods. Results The scavenging hydroxyl radical ( · OH) ability of grape bleeding sap was quickly reduced in the air and the reduction rate was lowered but not completely preven- ted by heating. The ability of scavenging · OH and O2· and its stability of bleeding sap could be en- hanced by Elaeagnus gum. Conclusion Air damaged the antioxidant property of grape bleeding sap. The heat treatment could only slow down the procedure while the Elaeagnus gum had a function in protecting and stabilizing the antioxidant ability of grape bleeding sap.
