摘  要:目的了解大理市售散装炒葵花仁与壳的重金属污染状况。方法随机采集了3种口味(原味、奶油、绿茶)共35份样品,采用火焰原子吸收光谱法分别测定仁与壳中Pb、Cu、Cr、Fe等重金属元素含量。结果样品的仁和壳中:Pb的合格率分别为62.86%、48.57%;Cu的合格率为22.86%、97.14%;Cr的合格率均为100%,Fe的含量远高于国家推荐日摄入量的标准。绿茶味的葵花籽仁中Pb含量高于原味;奶油味的葵花籽壳中Fe含量远比原味含量高。结论大理市市售散装炒葵花籽重金属污染较严重,应该加强监测、规范和控制。Objective To understand the pollution situation of heavy metals in bulk roasted sunflower seeds in Dali. Methods Contents of Pb, Cu, Cr and Fe from 35 sunflower seed samples in primary taste, creamy taste and green tea taste from Dali were determined by flame atomic absorption spectroscopy. Results For the kernel and hull of bulk fried sunflower seeds, the quali- fied rates of Pb were 62.86% and 48.57%, respectively, the qualified rates of Cu were 22.86% and 97.14%, respectively, and the qualified rates of Cr were both 100%. But the Fe content was significantly higher than the national standard of the rec- ommended daily intake. Pb content from kernel of green tea taste was higher than that from primary taste. Fe conteqt from hull of primary taste was far lower than that from creamy taste. Conclusion In Dali, the pollution of heavy metals in sunflower seeds was serious. It was suggested to reinforce monitoring, regulation and control.
