摘　　要：对牛奶中叶酸、V B12和生物素的本底含量进行测定,为乳制品中叶酸、V B12和生物素的强化提供数据支持。选取大量牛奶样本,通过微生物法对叶酸、V B12和生物素含量进行测定。牛奶中的叶酸含量大约为1.68μg/100 mL^5.69μg/100 mL,平均值为3.79μg/100 mL,多数集中在3.0μg/100 mL^5.0μg/100 mL;V B12含量大约为0.043μg/100 mL^0.357μg/100 mL,平均值为0.18μg/100 mL,多数集中在0.1μg/100 mL^0.3μg/100 mL;生物素含量大约为1.47μg/100 mL^4.63μg/100 mL,平均值为2.60μg/100 mL,多数集中在2μg/100 mL^3μg/100 mL。乳制品中强化叶酸、生物素和V B12可以依据上述数值参考添加。Detected the content of Folic acid, VB12 and Biotin in milk and provided data for Folic acid, V12 and Biotin milk product. Chose a large number milk samples and detected the content of Folic acid, V B12 and Biotin by microbiological method. The content of Folic acid was about 1.68 μg/100 mL-5.69 μg/100 mL in milk, the average value was 3.79 μg/100 mL,the majority concentrated in the 3.0 μg/100 mL-5.0μg/100 mL;the content of V B,2 was about 0.043 μg/100 mL-0.357 μg/100 mL in milk, the average value was 0.18 μg/100 mL, the majority concentrated in the 0.1 μg/100 mL-0.3 μg/100 mL;the content of Biotin was about 1.47 μg/100 mL-4.63 μg/100 mL in milk, the average value was 2.60μg/100 mL,the majority concentrated in the 2 μg/100 mL- 3 μg/100 mL.
