摘  要:应用双向电泳技术对不同品种的国产酿造大麦的蛋白质组成进行了差异性分析。电泳图谱显示,所有供试样品的双向电泳图谱中的蛋白质点均达到300个左右,几种供试大麦品种的蛋白质组成基本相同,蛋白质主要分布于等电点7.6~10.0、分子量大于43.0kDa的区域,其数量占总蛋白质数量的20%左右。而蛋白组成的主要差异蛋白质点共有6个,分子量在43~66kDa之间,等电点在6.5左右,基本上找到了不同品种国产酿造大麦蛋白组成的差异。In this study,the proteome differences of native brewing barley were analyzed by two-dimensional elec- trophoresis. The results showed that the protein composition of the detected barley was nearly the same. The plot number of protein was about 300, of which about 20% located in the pI region of 7.6 - 10. 0 and 43.0kDa area. During these plot, six proteins were considered as the main different proteins, of which the pI was 6.5 and molecular weight was from 43kDa to 66kDa. Finally,the main proteome differences of native brewing barley were found out.
