摘  要:为揭示豆腐渣对反刍动物的饲用价值,本试验采用康奈尔净碳水化合物-蛋白质体系(CNCPS)对豆腐渣营养价值进行评定。测定豆腐渣的CNCPS营养成分与氨基酸含量,应用CNCPS公式计算碳水化合物(CHO)和粗蛋白质(CP)中各组分含量。结果表明,以干物质计,豆腐渣中CP含量为17.65%,CP组分中的非蛋白氮(PA)、快速降解真蛋白质(PB1)、中速降解真蛋白质(PB2)、慢速降解真蛋白质(PB3)和不可降解真蛋白质(PC)含量分别为71.86%、10.93%、11.84%、3.83%和1.54%;CHO含量为63.71%,CHO组分中的糖类(CA)、淀粉与果胶(CB1)、可利用纤维(CB2)和不可利用纤维(CC)含量分别为19.14%、23.56%、55.61%和1.69%;总氨基酸和总必需氨基酸(TEAA)含量分别占CP的83.82%和38.53%,赖氨酸与蛋氨酸含量分别占总必需氨基酸(TEAA)的13.92%和1.74%,非蛋白氮中的非氨基酸氮含量为39.77%。结果提示,豆腐渣的反刍动物可利用能值高,瘤胃降解蛋白质的氨基酸氮含量高,利于瘤胃微生物蛋白质合成。The objective of this study was to evaluate the nutrient values of bean curd residue using Cornel/net carbo- hydrate-protein system(CNCPS).Common nutrient and amino acids of bean curd residue were determined,and the carbohy- drate (CHO)and crude protein (CP)components were calculated respectively according to the CNCPS method.The results showed that: CP content (DM basis)was 17.65% in bean curd residue, and non-protein nitrogen (PA), rapidly degraded pro- tein(PB1) ,intermediately degraded protein(PB2),slowly degraded protein (PB3),bound protein (PC)accounted for 71.86%, 10.93%, 11.84%,3.83%, 1.54% of CP,respeetively;CHO content(DM basis)was 63.71% in bean curd residue,and the sug- ars (CA), starch and pectin (CBj), available fiber (CB2), unavailable fiber (CC) accounted for 19.14%, 23.56%, 55.61%, 1.69% of CHO,respectively;Total amino acid and total essential amino acid (TEAA)accounted for 83.82% and 38.53% of CP,re- spectively.Lysine and methionine accounted for 13.92% and 1.74% of TEAA,respectively.The non-amino acid nitrogen (Nx 6.25)accounted for 39.77% of PA.The results indicated that available energy of bean curd residues was high ;Amino acid-N content of rumen degradable protein was high and beneficial for protein synthesis of rumen microorganisms.
