摘 要:在合肥大型超市中选取8款不同品牌杯装速溶奶茶产品,参照GB/T 8313-2008儿茶素HPLC检测方法,改进样品前处理方法,利用无水乙醇对样品进行超声波辅助提取,测定奶茶样品中主要含茶成分儿茶素和咖啡碱的含量。结果表明,8款品牌的杯装速溶奶茶均符合GB/T 21733-2008《茶饮料》中奶茶饮料中茶多酚和咖啡碱的含量要求。研究结果为杯装速溶奶茶中主要含茶成分的测定提供了一种参考方法。还对杯装速溶奶茶的质量标准、奶茶饮用安全性进行了探讨。Eight different brands of instant milk tea in cup were purchased from large supermarkets at Hefei city. With a modified pretreatment method, 8 instant milk tea samples were treated by ultrasonic-assisted extraction using absolute ethyl alcohol, and the amounts of catechins and caffeine in the samples were determined by a HPLC(high performance liquid chromatography) method referred to the national standard GB/T 8313-2008. The result showed that all of the eight samples met the amount requirements of tea polyphenols and caffeine in milk tea beverage by the national standard GB/T 21733-2008 for tea beverage. This HPLC method with a modified pretreatment approach provides a quantification way for instant milk teas in cup. Finally, the quality standards for instant milk teas and drinking safety were discussed.
