摘 要:[目的]采用响应面法优化新疆鲜马奶粉冷冻干燥工艺参数。[方法]在真空条件下,以新疆鲜马奶的浓缩比例、厚度、升华干燥时间作为考察因素,马奶粉的堆积密度、流动性及总蛋白含量为考察指标,在单因素试验的基础上,采用Box-Behnken中心组合设计,响应面法优化制备新疆鲜马奶粉冷冻干燥工艺参数。[结果]试验建立了冻干因素与新疆鲜马奶粉质量之间的回归模型;通过响应面分析,得到新疆鲜马奶粉最佳真空冷冻干燥工艺参数为新疆鲜马奶厚度1.02 cm、升华干燥时间24.87 h、浓缩比例27%。[结论]该研究所建模型拟合较好,可为马乳及其产品的产业化提供理论参考。[Objective] To optimize drying parameters of Xinjiang fresh horse milk frozen by response surface method.[Method] In vacuum condition,with Xinjiang fresh mare' s milk concentration ratio,thickness and sublimation drying time as investigation factors,bulk density,flowability and total protein content as investigation indicators,on the basis of single factor test,using Box-Behnken center combination design,the frozen and drying parameters of Xinjiang fresh horse milk was optimized by response surface analysis method.[Result] The regression model of frozen and drying factors and Xinjiang fresh mare's milk powder was established; through response surface analysis,the optimum vacuum frozen and drying technique parameters are:Xinjiang fresh mare' s milk thickness 1.02 cm,the sublimation drying time 24.87 h,the concentration ratio 27%.[Conclusion] The model fitting is good,which can provide theoretical reference for industrialization of mare's milk and products.
