摘 要:【目的】通过精胺和亚精胺处理赛买提杏,研究其在货架期品质及乙烯代谢的变化,为赛买提杏的抗衰老、贮藏保鲜提供理论依据。【方法】以转色期的赛买提杏为材料,精胺(Spm)和亚精胺(Spd)(10-4、10-5和10-6mol/L)处理杏果24 h后,室温下(25±2)℃模拟货架期8 d,每天测定硬度、SSC、好果率、乙烯释放量、ACC含量、ACO和ACS的活性。【结果】通过对货架期杏果的硬度、SSC、好果率的跟踪检测分析表明Spd10-4和Spm10-5mol/L两个处理浓度较好的保持了赛买提杏的品质;选用Spd10-4和Spm10-5mol/L两个处理浓度进一步研究对赛买提杏的乙烯代谢及其生物合成的影响。【结论】Spd10-4mol/L处理的赛买提杏较好的保持了其品质并降低了组织内源乙烯的生成量。[Objective] The purpose of this study is to study the change of ethylene generation and quality of Saimaiti apricot which was treated by spermine and spermidine in order to provide theoretical basis of antiaging and fresh-keeping for Saimaiti apricot.[Method] The color issue of the Simaiti apricot was used as material,different concentrations of spermine and spermidine (10-4,10-5,10-6mol/L) were applied to process the apricot for 24 h,and then it was put in the room temperature (25 ± 2℃) and stored 8 d.After that its hardness,SSC,good fruit percentage,ethylene release quantity,ACC content,the activity of ACS and ACO were measured every day.[Result] Through follow-up detection of the hardness,SSC,goog fruit percentage of apricot fruit in shelf life,the analysis showed that Spd10-4 and Spm10-5 mol/L,the two processing concentrations keep the fruit in good quality,which might be helpful for us to do the further research into the effects of polyamine on the ethylene metabolism and biosynthesis of Saimaiti apricot.[Conclusion] The Saimaiti apricot processed by Spdl0-4 mol/L maintains its quality better and the generation of endogenous ethylene organization is reduced.
