摘  要:【目的】探寻梨果实细胞壁各组分在果实生长过程中的变化趋势,为梨果实品质改良提供理论依据。【方法】通过提取"二十世纪"、"幸水"、"长十郎"3个品种梨果实的细胞壁成分,测定其木质素、纤维素、半纤维素、果胶含量。【结果】木质素含量在3个品种梨果实生长过程中均呈先增后减的变化趋势;纤维素、半纤维素含量在整个生长周期中的变化无明显规律;水溶性果胶含量递增,EDTA可溶性果胶含量从生长发育初期开始逐渐升高,其中"二十世纪"增加幅度高于其他两个品种,Na2CO3可溶性果胶含量在3个品种的生长发育过程中明显升高。【结论】木质素与梨果实成熟软化密切相关,而水溶性果胶和Na2CO3可溶性果胶含量与梨果实成熟过程呈正相关。[Objective]The variation trend of cell wall component in fruit was analyzed during fruit growth in order to provides theoretical bases for improving quality of fruits.[Method]The ingredient of cell wall was extracted in these varieties which Nijyuuseiki,Kousui and Cyoujyuurou using Rouse A H method.In addition,the content of lignin,cellulose,hemicellulose and pectin were measured by various methods.[Result]The result suggested that the content of lignin were increased at first and then reduced in the growing process of fruit.However,changes in cellulose and hemicellulose were not significant through the whole period of this study.Above all,water soluble pectin was elevated,and EDTA soluble pectin was gradually increased in early growing period; the increement of growth was higher in the Nijyuuseiki compared with the other varieties.Na2CO3 soluble pectin was obviously ascended in the process of growth and development of three kinds of pears.[Conclusion]The results indicated that lignin was closely associated with the ripening and softening of the fruit,and water soluble and Na2CO3 soluble pectin was positive correlation with the ripening processing of fruit.
