摘　　要：牛蒡菊糖由呋哺型果糖与吡喃型葡萄糖构成，具有抗氧化、抗炎抑菌、促进生长、镇咳、保肝等多种生物活性。本文综述了对牛蒡菊糖的提取分离、分子结构、生物活性等方面的研究现状，以期为牛蒡菊糖的进一步研究及其应用提供参考。Burdock inulin is comprised of furan type fructose and pyran type glucose. The biological activities of burdock inulin are antioxidant, anti-inflammatory and bacteriostasis, promote growth, antibechic, liverprotection. This review primarily summarizes the research on the extraction and isolation, molecular structure, biological activity of burdock inulin, in order to provide evidence and ideas for further study of the burdock inulin and its application in the field of medicine, health care products, food.
