摘 要:小麦麸皮为小麦的种皮,具有悠久的药用历史。现代研究发现麦麸含有膳食纤维、酚类物质、蛋白质、维生素、矿物质等多种类型的化合物,并具有降糖、降压、调脂、抗氧化、抗菌、抗炎、抗病毒、预防结肠癌、防止基因突变、调节免疫力、吸附重金属等广泛的药理活性,具有很大的开发利用价值,受到了国内外学者的广泛关注。该文对麦麸中有效成分及药理作用的国内外最新研究现状作一综述,并简要介绍了麦麸综合开发与利用中的限制因素,为我国丰富的麦麸资源的开发利用提供了新的参考。Wheat bran, as the testa of wheat, has a long history of medication. Modern studies have discovered that wheat bran contains dietary fiber, phenolic compounds, proteins, vitamins, minerals and many other compounds, and boasts wide pharmaco- logical activities such as blood glucose reduction, hypertension reduction, lipid reduction, anti-oxidation, anti-bacteria, anti-inflamma- tory, antivirus, prevention of colon cancer and mutations, immunomodulation and adsorption of heavy metals. With great development and utilization values, wheat bran has long attracted wide attention from Chinese and foreign scholars. The paper summarizes the latest advance in domestic and foreign studies on effective components in wheat bran and their pharmacological effect, and gives a brief intro- duction of the limiting factors in the comprehensive development and utilization of wheat bran, in order to provide new preference for the development and utihzation of abundant wheat bran resources in China.
