摘 要:采用分光光度法研究了红花刺槐[Robinia pseudoacacia L.f.decaisneana(Carr.)Voss.]红色素的稳定性和理化性质。结果表明,红花刺槐红色素属花色苷类,最大吸收波长为548 nm,溶于水、乙醇、丙酮、乙酸乙酯,不溶于石油醚、油脂等非极性溶剂;颜色在酸性条件下(pH<4)呈红色,碱性条件下(pH>8)呈绿色;耐光性、耐热性较好,蔗糖、抗坏血酸、苹果酸、柠檬酸等添加剂对其影响很小,苯甲酸钠、H2O2、Na2SO3对红色素有一定的破坏作用。金属离子Na+对红色素稳定性无影响,Mg2+、Zn2+、Al3+对其有增色效果,Cu2+、Fe2+对红色素影响较小,Fe3+可使红色素变为棕色。Using the spectrophotometry determination, the stability and chemical and physical properties of red pigment were studied from flowers of Robinia pseudoacacia L. f. decaisneana(Carr.) Voss. The results showed that the red pigment was a kind of anthocyanin, and its maximum absorption wavelength was 548 nm. The red pigment can be dissolved in water, alco- hol, acetone, ethyl acetate and other polar solvents freely, yet not dissoluble in petroleum ether, oil and other non-polar solvents. Its absorbance peak was changed under different pH values. It was red in acidic solutions(pH4), and green in al- kaline solutions(pH﹥8). It was sensitive to sodium benzoate, H 2 O2, Na2 SO3, and was stable to light, heat, sucrose, VC, malic acid, citric and acid. Na+had no effect on the red pigment. Mg2+,Zn2+and A13+could protect the extracted colorant. Cu2+and Fe2+had little effect on the red pigment, but Fe3+could make it brown.
