摘  要:为进一步开发柞蚕的可利用价值,对柞蚕幼虫、嫩蛹(神仙蛹)及滞育蛹的营养成分进行了分析比较,结果表明:蛋白质和脂肪含量均以滞育蛹最高,分别为59.2g/100g和12.1g/100g;总糖和粗多糖含量则以嫩蛹最高,分别为3.0g/100g和5.4g/100g,其中,嫩蛹的粗多糖比柞蚕幼虫高58.8%,比滞育蛹高74.2%;氨基酸总量嫩蛹最高为44.94g/100g,而且其天门冬氨酸和谷氨酸含量也高于柞蚕幼虫和滞育蛹,分别占氨基酸总量的10.68%和12.84%。柞蚕嫩蛹是营养价值较高的昆虫食品,具有较高的开发利用价值。To further exploit the valuable tussah resources, nutrient compositions of tussah larvae, tender pupae and diapause pupae were analyzed and compared in this paper. The results showed that the protein and lipid con- tent of diapause pupae were 59.2g/100g and 12. lg/100g, respectively, which were much higher than that in tus- sah larvae and tender pupae. The total polysaccharides and crude polysaccharides were 3.0g/100g and 5.4g/ 100g,among which the crude polysaccharides were 58.8 higher than that in tussah larvae and 74.20/oo higher than that in diapause pupae. The total amount of amino acids in tender pupae showed the highest level of 44.94g/ 100g. Furthermore, the content of aspartic acid and glutamic acid in tender pupae were higher than that in tussah larvae and diapause pupae which account for 10.68% and 12.84~ of the total amount of amino acids respective- ly. Tender pupae is an insect food of high nutrition, which is worth exploiting.
