摘　　要：海参是重要的海洋食物和药物资源。本文综合了近十年国内外有关海参的论文以及大量的网络资料,从海参的生长到生产和加工环节考察其中存在的有毒有害物质,综述并讨论了海参中存在的有毒有害物质及其分析检测方法,旨在为海参产品的食品药品安全研究提供参考。Sea cucumber is an important oceanic food and pharmacy resource. The article reviewed the studies and network informa-tion about sea cucumber in the past ten years,considering the poisonous and harmful substances in sea cucumber from its growth to the production process,summarized and discussed the poisonous and harmful substances in sea cucumber and the detection method which may provide references for the food and drug safety research of the products of sea cucumber.
