山西安泽青翘与老翘的氨基酸组分和微量元素分析

摘　　要：目的:测定山西安泽青翘与老翘的氨基酸组分和微量元素的含量,对其营养价值进行比较、评价,为综合开发、合理利用青翘与老翘资源提供依据。方法:采用氨基酸自动分析仪测定氨基酸组分,采用原子吸收法测定Ca,Fe,Zn,Cu,Pb。结果:测得青翘与老翘均含有17种氨基酸,总含量分别为6.54%,5.27%,人体必需氨基酸总量分别为2.57%,2.10%。青翘与老翘均含有Ca,Fe,Zn和Cu微量元素,其中Ca的含量分别为2 380,3 408μg·g-1;Fe的含量分别为188,298μg·g-1;Pb的含量均<5.0μg·g-1。结论:山西安泽青翘与老翘含有种类一致的较丰富的氨基酸和微量元素,均为营养价值丰富的保健及药用原料,且青翘氨基酸含量优于老翘,老翘微量元素含量高于青翘。Objective： To determine and compare the amino acid and trace elements in Green Fructus Forsythiae and Grown Fructus Forsythiae from Shanxi Anze and discuss the nutritional composition, provide the reference evidence for the development and utilization of Green Fructus Forsythiae and Grown Fructus Forsythiae. Method： The amino acid components and trace elements （Ca, Fe, Zn, Cu and Pb） were analyzed by amino acid analyzer and atomic absorption spectrometry, respectively. Result： Seventeen amino acids were contained in Green Fructus Forsythiae and Grown Fructus Forsythiae, the total amino acid content was 6.54% and 5.27% , the essential amino acids content was 2.57% and 2.10% , respectively. Trace elements such as Ca, Fe and Zn, etc, were determined in Green Fructus Forsythiae and Grown Fructus Forsythiae, the content of Ca was up to 2 380,3 408μg .g-1, the content of Fe was 188, 298 μg .g-1, Pb was lower than 5μg .g-1, respectively. Conclusion： There are abundant amino acids compositions and trace elements in Green Fructus Forsythiae and Grown Fruetus Forsythiae from Shanxi Anze, they could be used as raw materials of health products and drugs. The amino acids content of the Green Fructus Forsythiae is more than the Grown Fructus Forsythiae, the trace elements content of the Grown Fructus Forsythiae is more than the Green Fructus Forsythiae.
