摘　　要：纤维肠衣在蒸煮火腿的生产中具有无法替代的作用,并详细论述了蒸煮火腿生产工艺中的工艺要点和设备的选型配套,同时针对大、中、小型企业和自动、半自动、手动机器设备分别展开讨论,可以适用不同生产需求的各类企业参考。最后,提出肉制品加工企业进入以质取胜的年代。Fiber casing plays an irreplaceable role in cooking ham processing. The key processing technology and equipment selection of cooking ham processing technology were introduced in detail. The big, medium, small- sized enterprises and automatic, semi -automatic, manual machine equipment were discussed, respectively. It would provide reference for different production requirements of all kinds of enterprises. Finally, meat products processing enterprises was entering the generation of competing on quality.
