摘  要:以亚硒酸钠和党参多糖为原料合成硒化党参多糖,电感耦合等离子体质谱法(ICP-MS)测定其中硒的质量分数为25.92 mg·g-1。利用紫外-可见光谱、红外光谱两种表征手段对其结构进行了表征,证实了硒化党参多糖的合成。采用邻二氮菲-Fe2+氧化法和邻苯三酚自氧化法测定硒化党参多糖的抗氧化能力,结果表明,在实验设置的质量浓度范围内,硒化党参多糖的抗氧化能力随着质量浓度的增加而增加,且高于党参多糖。2.0 mg·mL-1的党参多糖和硒化党参多糖对超氧阴离子自由基的清除率分别为47.05%和54.46%,对羟基自由基的清除率分别为50.20%和61.75%。为进一步研究硒化党参多糖作为抗氧化能力较强的食品和药品的可能性奠定了基础。Sodium selenite and Codonopsis pilosula polysaccharide (CPP) were used to synthe- size selenium - Codonopsis pilosula polysaccharide (SeCPP) in this experiment by chemical method. The content of selenium was determined by inductively coupled plasma mass spectrome- try ( ICP - MS) and the result was 25.92 mg/g. The SeCPP was characterized by using ultravio- let- visible spectroscopy (UV- VIS) and infrared spectroscopy. The successful synthesis of SeCPP was proved by results. The antioxidant activities in vitro of SeCPP were investigated by phenanthroline -Fe2+ and pyrogallol autoxidation method. The results showed that in the setting concentration range, the antioxidant activities were increasing with the elevation of concentra- tion. The antioxidant activities of SeCPP were better than that of CPP. Using 2.0 mg/mL CPP and SeCPP, the clearance rates of superoxide anion radical were 47.05 % and 54.46 % , re- spectively, and the scavenging rates of hydroxyl radical were 50.20% and 61.75%, respective- ly. This research was an important step as means of laying the foundation for further research on SeCPP as a low toxicity and effective organic selenium product.
