寒泊羊与小尾寒羊育肥效果及肉品质比较研究

摘　　要：旨在比较寒泊羊和小尾寒羊羔羊的育肥效果及肉品质间是否存在差异,将两品种的羔羊在同等条件下育肥70 d,比较体尺、体重、产肉性能及肉品质等指标。结果表明:寒泊羊的育肥期总增重及日增重极显著高于小尾寒羊(P<0.01);寒泊羊的胸围、管围、大腿围、腰角宽、坐骨宽均极显著高于小尾寒羊(P<0.01),胸宽显著高于小尾寒羊(P<0.05),而体高极显著小于小尾寒羊(P<0.01);寒泊羊的产肉性能(净肉重、净肉率、眼肌面积)及胴体脂肪含量值(GR)显著高于小尾寒羊(P<0.05),寒泊羊的后腿净肉重和胸下肉总重分别比小尾寒羊提高36.52%和58.44%;寒泊羊的肉品质(肉色、大理石花纹、剪切力)优于小尾寒羊(P<0.05),熟肉率及pH值在两品种间无显著差异(P>0.05)。综上所述,寒泊羊的育肥效果及肉品质优于小尾寒羊,更适合用作羔羊肉的规模化生产。This experiment was conducted to compare the difference of fattening effect and meat quality between hanper lamb and Small-tail lamb fed under the same fattening program for 70 days. The results indicated that hanper＇s total gain and daily gain, the chest girth, cannon circumference, thigh circumference, hip width, sciatic wide were higher than that of small-tail sheep （P〈0.01）; the chest width of the former was significantly higher than that of small-tailsheep（P〈0.05）; Hanper＇s body height was shorter than that of the latter（P〈0.01） ;the meat production performance （net meat weight, net meat ratio, eye muscle area ）and GR index of hanper were significantly higher than that of small-tail sheep （P〈0.05）, the hind leg＇s net meat weight and brisket＇s total weight of hanper sheep respectively increased by 36.52%and 58.44%compared with that of small-tail han sheep;meat qualities（meat colour, marbling and shear force ） of hanper sheep were superior to that of small-tail han sheep （P〈0.05）, yet the cooked percentage and the value of pH were no significant difference between them（P〉0.05）. In conclusion, hanper sheep＇s fattening effect and meat qualities were superior to that of small-tail Han sheep, and it is suit to produce lamb meat.
