摘  要:以玉米蛋白粉为原料,采用无水乙醇进行脱色后,利用微波辅助提取玉米醇溶蛋白。通过单因素和正交试验,比较各因素对提取效果的影响。结果表明,以乙醇为溶剂提取玉米醇溶蛋白最优工艺参数为:微波功率440 W,乙醇浓度80%,液料比1:10,微波处理时间为60 s,提取次数为2次。通过与传统方法比较,微波提取极大缩短了提取时间,提高得率,脱色处理降低了产品的吸光度,提高产品质量。Microwave-assisted extraction method was used in extracting zein from corn gluten meal which was decolorized with absolute alcohol. With single factor and orthogonal test, it was compared the extraction effects on zein. The results showed that the optimal extraction conditions with ethanol as follow: the microwave power was 440 W, concentration of ethanol was 80%, the solute to solvent ratio is 1:10, the extraction duration is 60 s, and extraction for 2 times. Compared with traditional extraction methods, microwave-assisted extraction method was a rapid method with higher yield. The decolorization treatment reduced the absorbance of zein, improve the quality of zein.
