摘 要:以普洱茶(熟茶)为原料,分别采用无水乙醇、蒸馏水、不同体积分数含水乙醇为溶剂提取茶多酚,在浸提温度、浸提时间、料液比、不同浓度含水乙醇4个单因素试验的基础上,通过正交试验,比较分析这4个因子对茶多酚提取的贡献率大小及差异性,并对不同溶剂提取普洱茶(熟茶)茶多酚质量分数进行比较,结果显示:以不同体积分数含水乙醇为溶剂,茶多酚提取质量分数最高,为13.86%;以蒸馏水为溶剂,茶多酚提取质量分数次之,为9.67%;而以无水乙醇为溶剂,茶多酚提取质量分数最低,为5.49%。The article using anhydrous ethanol, distilled water, different volume fractions of aqueous ethanol solvent to extract tea polyphenols from Pu-erh tea (fermented tea). Four factors, including ex- traction temperature, extraction time, solid-liquid ratio and different concentrations of aqueous etha- nol, on the basis of single-factor test to determine the level of orthogonal experiment. By orthogonal ex- periments and comparative analysis, the contribution rates of the four factors on the extraction of tea polyphenols and their differences were studied. The results showed that the extraction mass fraction of tea polyphenols was the highest 13.86% by the aqueous ethanol, by distilled water was the second 9.67% , and the lowest was 5.49% by anhydrous ethanol
