摘  要:霉菌毒素是畜牧业生产中常见的污染物,其污染严重、范围广、不易控制,与此同时,霉菌毒素的高毒性和高致癌性也影响着我国农产品出口贸易、动物性食品生产加工业、饲料工业等多产业的发展,这不仅造成巨大的农业经济损失,还给人类健康带来隐患。因此,研究其对人的健康和动物生产性能影响是当今科学研究的热点和焦点,而采取有效防控和处理食品、饲料中各种霉菌毒素的污染更是当务之急。因此,有必要对黄曲霉毒素(AFTs)、玉米赤霉烯酮(ZEN)和脱氧雪腐镰刀菌烯醇(DON)这3种霉菌毒素的概况、危害、脱毒的研究进展加以综述,为今后该3种毒素的防毒、控毒研究提供参考。Mycotoxins are the common pollutants in animal husbandry production. They are not easy to control for their heavy and wide pollution. At the same time,mycotoxins are of high toxicity and high carcino- genicity,and affect our agricultural product export trade, animal borne food produciton and feed industry, which not only cause huge economic loss of agriculture, but also bring hidden danger to human health. Therefore, studying its effect on human health and animal production performance is the focus of scientific research, and researching on the effective prevention and control methods of them in food and feed is the top priority. This paper mainly introduced the harm, detoxification, prevention and control of aflatoxin (AFTs), zearalenone (ZEN) and deoxynivalenol (DON) to provide the reference to control them.
