摘 要:韦兰胶是由鞘氨醇单胞菌合成并分泌到胞外的一类高分子微生物多糖.因其具有优良的增粘性、独特的假塑流变性、悬浮和乳化性、酸碱稳定性及耐温性而日益受到关注.以鞘氨醇单胞菌TP-5为实验菌株,对其发酵培养基的组分进行了优化;探究了3类不同携氧剂对韦兰胶的产量和发酵液表观粘度的影响.最终确定了最佳发酵培养基配方,韦兰胶产量可达(18.25±0.3)g/L,比优化前提高了40.89%.在培养基中添加不同的携氧剂也可以相应地提高胶产量.Welan gum is a kind of extracellular microbial polysaccharides, which is synthe- sized by Sphingomonas sp. It has been gaining much more attention because of its pseudoplastic rheology property, high suspension, emulsion, compatibility and stability. A Sphingomonas sp. TP-5, stored by our laboratory, was used to optimize cultivation conditions and medium components. The effect of three different types of oxygen-carrying agents on gum production and apparent viscosity was explored. The optimum fermentation conditions and components were obtained, in which optimal conditions welan gum yield reached (18.35 ± 0. 3) g/L, in- creased by 40.89%. Added different proportions of oxygen-carrying agents to the medium can also get a corresponding increase in gum production.
