摘　　要：采用酸法和酶法从东北特产梅花鹿鹿皮中提取胶原蛋白 ,对其中的水分、灰分、氮含量、微量元素及羟脯氨酸含量、分子量、氨基酸及饱湿性和吸水性进行测定 。The collagen of deer skin was extracted by means of acid extraction and pepsin digest extraction methods. The contents of moisture, ashes, nitrogen, trace elements, hydroproline, molecular weights of hydroproline, amino acids and ability of water maintained were determined in the collagen of deer skin. Under the same experimental conditions, the properties of collagens extracted from calf and pig skin were compared with those of the collagen of deer skin.
