Study on fatting effects and meat quality of Fleckvieh×Simmental×Guizhou beef cattle

摘  要:为探索用弗莱维赫牛冻精与西×本母牛杂交的生产效果及其对肉牛肉质的影响,选用340 kg左右的弗×西×本杂交公牛(试验)和西×本杂交公牛(对照)各10头,采用同一日粮进行了60 d对比育肥饲养试验。结果表明:试验组的增重比对照组高29.1%(P<0.01);饲料转化效率高13.9%(P<0.01);净能转化效率高8.11%(P<0.05);蛋白质效率高6.82%(P<0.05);产肉量提高11.13%(P<0.01);屠宰率高1.67%(P>0.05),净肉率提高3.53%(P>0.05),眼肌面积大39.34%(P<0.01),牛肉大理石纹高16.5%(P<0.01),熟肉率高4.53%(P>0.05),保水率高3.36%(P>0.05),剪切力低19.79%(P<0.01);牛肉中水分、蛋白质、脂肪、矿物质、氨基酸、脂肪酸、营养性矿物元素含量有一定变化,但差异不显著。从而认为:弗×西×本杂肉牛杂交组合优于西×本杂交肉牛,特别有利于生产高档牛肉。The aim was to study the effect of Fleckvieh cattle frozen semen hybridized with Simmental×Guizhou Local hybrid cattle on production performance and meat quality parameters. 10 Simmental×Guizhou Local bull and 10 Fleekvieh× Simmental×Guizbou bull with 340 kg were used respectively, and 60 d fattening feeding trial was conducted. The results showed that the weight gain, feed conversion ratio, net energy conversion ratio, protein conversion ratio, meat production, dressing percentage, loin muscle area, beef marbling cooked meat percentage and water-retention rate of experimental group were 29.1% (P〈0.01), 13.9% (P〈0.01), 8.11%(P〈0.05), 6.82%(P〈0.05), 11.13% (P〈0.01), 1.65% (P〉O.05), 3.53% (P〉0.05), 39.34% (P〈0.01), 16.5% (P〈0.01), 4.53% (P〉0.05), and 3.36% (P〉0.05) higher than the control group. The shear stress was 19.79% (P〈0.01) lower than the control group. The beef content of water, protein, fat, minerals, amino acids, nutritional mineral had little change, but the difference was not significant. Thus we believed that the Fleckvieh × Simmental×Guizhou hybrid cattle were better than the Simmental ×Guizhou hybrid cattle, and particularly conducive to produce high-grade beef production.
