摘  要:采用不同去种皮和护色方法进行板栗(Castanea mollissima)去种皮和护色对比和筛选。结果表明,选用85℃热水浸烫5 min去种皮较容易,然后用自来水冷却10 min,5 mg/mL维生素C+5 mg/mL柠檬酸+2 mg/mL EDTA-2Na护色液护色30 min,在该处理下得到的板栗仁形态完整,色泽鲜亮,品质较好。Different methods were used to decorticate seed coat and protect the colors of chestnut(Castanea mollissima)kernel. The results showed that 85 ℃ hot water scalded 5 minutes could decorticate more easily, and then tap water was used to cool for 10 minutes. 5 mg/mL vitamin C + 5 mg/mL citric acid + 2 mg/mL EDTA-2Na was used as protecting color liquid to soak the chestnut kernel 30 minutes. Under this process, the chestnut form kernel was complete, color was bright and quality was high.
