摘 要:本研究旨在研究育肥猪屠宰过程中的福利水平对育肥猪生化指标及猪肉品质的影响。12头(100±2.2)kg的长×荣二元杂交猪按年龄和体重随机分为2个处理,处理1采用直接刺杀心脏放血方式,处理2采用电击晕后放血方式。结果表明:屠宰方式对育肥猪生化指标存在明显影响,与直接心脏刺杀放血法相比,电击晕后放血方式处理组的肝糖原和肌糖原含量分别提高了14.1%(P>0.05)和25.1%(P<0.05);血清葡萄糖、血清肌酸激酶、血清乳酸脱氢酶和肌肉乳酸含量分别降低了14.4%、28.7%、9.9%(P>0.05)和8.5%(P<0.05);屠宰方式对育肥猪猪肉品质存在明显的影响,与直接刺杀心脏屠宰方式相比,电击晕后放血屠宰方式提高了宰后45 min的pH(P<0.05)和a值、b值(P>0.05);降低了L值(P<0.05)和猪肉滴水损失(P P>0.05)。本研究表明直接刺杀心脏放血方式对生长育肥猪的应激强于电击晕后放血方式,并显著影响血液生化指标,进而降低猪肉品质。The study was conducted to investigate the effect of welfare during slaughter on biochemical indicators and meat quality.A total of 12 healthycrossbred (Landrace×Rongchang) pigs with an average body weight of (100.0±2.2)kg were randomly divided to 2 treatments with 6 replicates per treatment and 1 pigs per replicate,in which pigs were stunned by electricity (test group) and slaughtered by directly killing heart (control group),respectively.The results showed that slaughter measures obviously affected biochemical indicators and meat quality of finishing pigs.Compared to the control group,hepatic glycogen and muscle glycogen in the test group were increaseed by 14.1%(P>0.05) and 25.1%(P<0.05); serum glucose,serum creatine kinase,serum lactate dehydrogenase and muscle lactic acid in the test group were decreased by 14.4% (P >0.05),28.7%(P>0.05),9.9%(P>0.05) and 8.5% (P<0.05).The slaughter measures of being stunned by electricity was significantly increased the pH values of LT muscle at 45 min(P<0.05),a* value(P>0.05) and b* value(P>0.05)after slaughter,and significantly decreased L*value(P<0.05) and drip loss(P>0.05).In conclusion,the stress of directly killing heart measures was higher than that of being stunned by electricity,and the biochemical indicators and meat quality of the former were affected obviously.
