摘 要:目的了解清远市市售熟肉制品中人工合成色素含量情况,为制定科学有效的管理措拖提供依据。方法对2011—2012市场上销售的熟肉制品进行抽样调查,依照GB/T 5009.35-2003食品中合成着色剂和GB/T 21916-2008水果罐头中的合成着色剂的测定方法进行检测。结果检测分析了233份样品,合格率为94.85%。检出的人工合成色素有柠檬黄、胭脂红、日落黄。结论熟肉制品中超范围使用了人工合成色素,应加强此类食品的监督管理,以保障消费者身体健康。[Objective]To understand the artificial pigment content in cooked meat products in Qinyuan City,and provide evidence for developing scientific and effective management strategies.[Methods]The market sold cooked meat products were sampled for investigation from 2011-2012.The tests were based onGB /T 5009.35-2003" Determination of Synthetic Colorants in Foods"and GB /T 21916-2008" Determination of Synthetic Colorants in Fruit Tins".[Results]A total of 233 samples were tested,with the qualified rate of 94.85%.The content of tartrazine,carmine,sunset yellow was found in checked samples.[Conclusion]The using of artificial pigment in cooked meat products beyond authorization exists.The supervision should be strengthened in order to protect the health of consumers.
