摘 要:为系统分析不同品种杨梅果实香气成分的差异,采用气相色谱—质谱联用(GC-MS)技术,对10个品种杨梅果实进行分析鉴定,并结合DPS软件进行聚类分析.结果表明:烷烃和烯烃在10个品种中均检出,是杨梅果实最主要的香气成分;醇类和酯类在8个品种中检出;酮类和芳香烃只在5个品种中检出;荸荠种是唯一含有6个香气种类的品种.聚类分析显示,产自福建的6个杨梅品种较好地聚在一类,与另外4个产自浙江的品种遗传差异较大.ParsOn and oldln were the major aroma categories, which were found to be present in all the ten Chinese bayberry( Myrica rubra Sieb. et Zucc) cuhivars tested. Alcoho and ester were found to be present in eight bayberry cultivars tested, ketoneand aromatic hydrocarbon were found in five. ' Biqizhong' was the only cultivar which had all six aroma categories. Cluster analysisshowed that six bayberry euhivars from Fujian Province were wall distinguished from four cultivars from Zhejiang Province based ontheir aroma components..
