摘  要:应用电子束射线对西洋参进行辐照灭菌,使用电子顺磁共振波谱仪(ESR),研究了辐照剂量与西洋参产生的自由基ESR谱的相关性,及不同含水量、放置时间和温度对ESR谱的影响;使用高效液相色谱仪(HPLC)和氨基酸分析仪检测了不同辐照剂量对西洋参皂甙、氨基酸成分的影响,以及西洋参的辐照灭菌剂量和储存效果。试验表明西洋参的辐照剂量、水分含量及放置温度和时间与ESR谱信号强度具有显著相关性。辐照剂量在15kGy以下时对所测皂苷成分没有影响,在较高辐照剂量40kGy时对氨基酸含量基本没有影响。西洋参的最佳辐照灭菌剂量为10kGy。The present paper studied the irradiation sterilization of American ginseng by using the electron accelerator, the relationships between irradiation dose and free radical were conducted by utilizing the electron paramagnetic resonance spectrometer (ESR). The effects of different water content, storage time and temperature on the ESR spectrometer were analyzed. The component of saponin and amino acid from American ginseng which changed by different irradiation dose were detected by high performance liquid chromatography (HPLC) and amino acid analyzer. The effects of irradiation dosage and storage effect of American ginseng were researched. The experimental results showed that the intensity of ESR signal had great relations with the irradiation dose, storage temperature, storage time and water content of American ginseng. The saponins component was not affected under the 15 kGy irradiation and even the 40 KGy irradiation also has no considerable change to the amino acid content. The optimal dose of irradiation sterilization for American ginseng was 10 kGy.
