摘 要:在缔合胶体中表面活性剂、有机相、助表面活性剂的选择及含水量、缓冲溶液pH值对微乳液中酶催化活力均有影响。油包水微乳液中的酶催化反应可用来模拟细胞微环境 ;中相微乳液中的酶催化反应既可提高酯转化率又对产物的分离提供方便 ;而明胶包埋的微乳液凝胶中固定化酶的催化反应则在产物的分离和酶的重复利用方面有其优点 。The enzymatic reaction in microemulsion was comprehensively discussed.Rffect of surfactant、organic solvent and cosurfactant on enxymatic reaction and the site of enzyme solubilization in micremulsion was also studied.Heptane,octane,and nonane are the solvents of choice.The enzyme molecule can be solubilized in the aqueous core or anchored in the region of the water-oil interface,near the micellar membrane.Water content in microemulsion and pH values of buffer solution have also effect on the enzymatic activity.Lipase activity prezented a bell-shaped curve on the water content and a bell-shaped curve or a sigmoidal on the buffer pH.On the other hand the enzymatic reactions in the middle phase microemulsion of different surfactant,and the gelatin-containing microemulsion-based gels ofr lipase catalysed ester synthesis in orgaric solvents.
