摘  要:用水蒸气蒸馏法提取、GC MS法鉴定具有特殊气味的番茄茎叶中挥发性化学成分。所得挥发性成分呈微黄色 ,含量为 0 0 6% ,从中分离出 2 1种化合物 ,鉴定了其中 1 4种。番茄茎叶中挥发性成分多为含氮化合物和酯类化合物 ,具有特殊气味 ,有较强水溶性。This paper is to identify the volatile chemical compositions of the stems and leaves of Lycopersicon esculentum Mill which have special smell.Water vapour distillation was used in the extraction and GC-MS was used in identification of the volatile compositions.The volatile compositions showed slight yellow colour and its content was 0.06%.Twenty one compounds were separated,fourteen of them were identified.The stems and leaves in the stems and leaves of Lycopersicon esculentum Mill showed they are very soluble in water and that most of them are nitrogenous and esters.
