摘  要:目的 :研究冷习服机体血清必需氨基酸、14种矿物质含量的变化 ,为指导寒区部队的膳食结构 ,营养配餐 ,做好卫勤保障工作提供的依据。方法 :检测寒冷血管反应指数 (VRCI) ,评价冷习服能力 ;采用电感耦合等离子体光谱分析 (ICP)和原子吸收光谱分析 (AAS)方法检测血清中矿物质的含量 ;采用自动氨基酸分析仪测定血清中氨基酸的含量。结果 :(1)冷习服过程中小鼠血清氨基酸和矿物质含量的变化 :冷暴露 10d ,多数呈下降趋势 ;冷暴露 2 0d ,则明显升高(P <0 .0 5 ,P <0 .0 1) ;冷暴露 30d ,多数恢复正常 ,但Ca、Mg、Zn、Al的含量明显降低 (P <0 .0 5 ,P<0 .0 1) ,Cu含量明显升高 (P <0 .0 1)。 (2 )人体实验结果表明 ,新兵经过 1个月的耐寒锻炼 ,VR CI由 10 .0 5± 1.6 6增加到 11.76± 2 .2 9(P <0 .0 5 ) ;冷习服后血清必需氨基酸中VAL、LEU、ILE、THR明显升高 (P <0 .0 5 ,P <0 .0 1) ,而矿物质Cu、Fe、Mn、Pb含量明显下降 (P <0 .0 5 ,P <0 .0 1)。结论 :寒区部队膳食结构和组成使血清中大多数矿物质和必需氨基酸含量正常 ,但Cu、Fe、Mn含量明显下降。Cu、Fe是体内易缺乏的必需元素 。Objective:To study the changes of essential amino acids and 14 minerals in serum during cold acclimatization so as to provide reliable basis for guiding the dietary pattern, meal planning of the army in cold area and ensuring service hygiene. Methods: Cold vaso-reaction index (VRCI) was examined to evaluate the cold acclimatization ability. The levels of minerals in serum were determined by spectrum analysis of inductively coupled plasma (ICP) and atomic absorption spectrometry (AAS).The levels of amino acids in serum were assayed by amino acid autoanalytic instrument. Results:(1) Changes of serum amino acids and minerals in mice during cold acclimation: Most of the amino acid and mineral levels showed declining tendency after 10 d- cold exposure and obviously rose after 20 d (P<0.05,P<0.01) ,and restored to normal after 30 d. But Ca, Mg, Zn, Al contents markedly decreased, while Cu content increased (P<0.01) after 30 d. (2) The results of human body experiment showed that the VRCI of recruits was increased from 10.05±1.66 to 11.76±2.29 (P<0.05) after 1 month of cold tolerance training, and serum VAL, LEU, ILE, THR levels were also increased (P<0.05,P<0.01) whereas serum Cu, Fe, Mn, and Pb contents were decreased (P<0.05,P<0.01). Conclusion:Most of the serum amino acid and mineral contents were normal, suggesting that the dietary pattern of the army in cold area may be nearly rational. However,the falling of Cu and Fe content indicated that these essential elements should be supplemented in diet.
