摘 要:考察了鱼油与普通不饱和植物油在氧化过程中的差别:鱼油具有高碘值,却只有较低过氧化值(PV)。随着氧化过程的延续,对提高鱼油过氧化值PV没有作用,反而使表观物性黏度增加;经反复试验,用紫外光谱仪、激光拉曼光谱仪进行表征。揭示了鱼油的多双键结构,不同于不饱和植物油,并随着氧化时间的延长,其异构化、(累积)共轭化程度越明显,缩聚反应程度也越深,黏度剧增。证明鱼油不仅具有通常的不饱和油脂的双键,还有孤立双键的存在;累积共轭双键形成,结果极大地消耗了游离基,减少了过氧基—OOH的生成与传递,阻滞了深度氧化的正常持续。The differences between fish oil and ordinary unsaturated vegetable oil in the oxidation process were systematically investigated.Fish oii has a high iodine value but a low.peroxide value (pv).As the oxidation process continues,it has no effect on the increasing of peroxide value (PV)of fish oil,while the viscosity increases.The fish oil was characterized by ultraviolet absorption instrument and laser Raman spectrome(er with repeated experiments. The results reveal the double bond structure of fish oil,which.is different from unsaturated vegetable oil.With the increasing of oxidation time,the degree of isomerization and (cumulative)conjugation are more obvious,the degree of polycondensation reaction is deeper and the viscosity is sharply increased.It is,proved that fish oil not only has the double bond of unsaturated oil,but also makes the double bond isolate.The formation of accumulated conjugated double bonds greatly consumes free radicals,reduces the formation and transfer of peroxy --OOH ana blocks the normal continuation of deep oxidation.
