摘  要:为探讨箱式气调保鲜对鲜食莲蓬贮藏品质和生理的影响,以鲜莲蓬为试材,(2±0.5)℃条件下采用气调保鲜箱进行贮藏,测定不同气嘴的气调箱和聚乙烯(PE)保鲜膜(对照)中莲蓬的感官品质指标、相关生理指标及环境气体指标的变化规律。结果表明:2嘴箱式气调处理贮藏21 d可有效控制贮藏期内莲蓬由于失水、褐变及黄化导致的外观商品性下降,并能抑制莲子口感的劣变,较常规PE膜包装保鲜期至少延长1周;2嘴箱式气调处理可抑制贮藏过程中莲子可溶性固形物含量的下降,抑制莲房组织相对电导率和丙二醛含量的增加,减缓莲房组织过氧化物酶和多酚氧化酶的活性的增大;2嘴气调箱内气体环境最有利于莲蓬的贮藏,适宜的气体浓度O2为13%~15%,CO2为5%~5.5%。综上,2嘴箱式气调保鲜更有利于鲜莲蓬的低温贮藏。In or der to explore the effect of quality and physiology of fresh lotus during box-type modified atmosphere storage, the lotuses were stored in modified atmosphere box with different number of gas nozzles and the polyethylene(PE) plastic package(control) at(2±0.5) ℃. The change rule of sensory quality index, related physiological indexes and environment gas indexes of lotus were determined during storage. Results showed that, storing in modified atmosphere box with 2 gas nozzles for 21 days could effectively inhibit the decline of appearance and commodity characters of lotus caused by water loss, browning and yellowing, and the taste deterioration of lotus seed,and prolong the storage life of fresh lotus by at least 1 week compared with PE film packaging. The treatment by modified atmosphere box with 2 gas nozzles also could inhibit the reduction of soluble solids content in lotus seeds and the increase of relative electric conductivity(REC) and malondialdehyde(MDA) content in lotus tissue, and delay the increase of peroxidase(POD) and polyphenol oxidase(PPO) activities in lotus. The gas environment in modified atmosphere box with 2 gas nozzles was the most favorable for the storage of the lotus. The optimal gas condition was 13%-15%O2, and 5%-5.5%CO2. In conclusion, the 2 gas nozzles modified atmosphere box was more conducive to the low-temperature storage of fresh lotus.
