摘  要:为探寻库尔勒香梨自然成熟过程的中理化指标的变化规律,提出一种库尔勒香梨采摘期的评价方法,该研究分别以自然成熟和采后常温贮存的库尔勒香梨为研究对象,研究库尔勒香梨硬度和SSC(可溶性固形物含量)的变化规律。用Excel软件和Spass软件处理数据,结果表明:自然状态下的整个成熟期内,随成熟时间的不断延长,香梨的硬度逐渐减小,可溶性固形物含量逐渐增加,且二者呈明显的负相关,R2=0.991;不同采摘期采摘的香梨硬度随采摘时间的推后逐渐减低,可溶性固形物含量逐渐增加,且二者的变化趋势逐渐接近于自然成熟状态下的变化趋势。可根据香梨采摘后的运输和存储要求确定最优的采摘期。研究结果可为库尔勒香梨采摘期的确定提供参考依据。In order to study the correlation between the physicochemical indexes during the Korla pear maturation and seek an evaluation methodology which is fit for the Korla pear harvest-maturity, the Korla pears in the whole mature period were taken as the research objects. Concentrating on the variation rules of the physicoehemical indexes, including the Korla pear's hardness and soluble solids content in its mature period, its parameters of the mean value, mean change rate and the change rule of variance were analyzed and verified. With Excel Software and Spass Software processing data, the results showed that Korla pear's hardness decreased gradually and soluble solids content increased gradually, and the two indexes appeared significant negative correlation (R2= 0.991) ; Korla pear's hardness and soluble solids content change rate and the variance between each control point all presented the trend that the first increased, then decreased, but the peak value all appeared at the same time, which is exactly the same time when the decreasing curve of the pear hardness and the increasing curve of the soluble solids content cross. Accordingly we came up with a method based on physieoehemieal index to evaluate the Korla pear maturity percentage, then quantified the results. The results of the study can provide a reference basis for the Korla pear maturity evaluation.
