摘　　要：目前国内食品安全情况相当严峻,为此应提高政府食品安全的管制绩效,完成食品安全在管理效率上由低向高的转变。通过运用主成分分析方法,对相关消费者信任度改善的主成分方差贡献率进行因子载荷矩阵分析,在此基础上构建政府规制机构与不同规模食品生产企业的博弈模型,以此来探寻不同规模企业都生产不安全食品的内在原因。The current situation of domestic food safety is quite serious,so it＇s a must to enhance the performance of government＇s management of the food safety, completing the change of management efficiency from the low to the high level on food safety. The paper carries out the matrix analysis of factor loading about the improvement of consumer confidence by the principal component analysis to build a game model of government regulation institutions and different food production enterprises in order to explore the underlying causes of unsafe foods in different production enterprises.
